“COOKING CLASSES”

with Franco

 These  cooking classes are in high demand and in order to give everyone interested a chance to attend there is a limit of one class per person per season. Each class will consist of 12 attendees and will begin at 9:30 AM in the kitchen of Fiorino. Of course we’ll prepares Italian dishes, mostly from the restaurant current menu. Lunch will take place at class end (around noon) and we’ll savor the menu we’ll have prepared.  $10 per person to pay for the provisions for the class, at season’s end,  any left over money will go to a local food bank.

    Hi Franco, I just wanted to let you know how much I enjoyed the cooking class last Saturday and how much I appreciated that you took the time from your busy schedule to teach all of us those wonderful recipes. I’m going to try to make the eggplant and gnocci this weekend for my family (and of course the sun-dried tomato spread for the bread). If you accept more students for a different class, please include Marlene Keenan and myself. I very much look forward to spending my birthday at the restaurant on March 24th. See you then!!!

      Thank you Sharon, I really enjoyed the fun class on Saturday. As I probably have mentioned during lunch after the class, this is my way of saying thank you to my patrons like you for their continuing support and loyalty. It may take more than once before you can master those dishes but do not get discouraged, you will be amazed of what you can do.

      Shirley, this first round of cooking classes will take me well into May for the simple reason that more than 150 people have signed up. Occasionally I have cancellations and if the space cannot be filled I will be more than happy to inform you, usually it is in short notice.

      Good morning Mary Grace,

      “Migliaccio”, is a cake traditionally prepared during Carnevale, in and around Naples, it reminds me of the filling of the Napolitan Sfogliatella.

      Here are the ingredients:
      (the measurements are metric, so you will have to do the conversion)

      1 liter of milk
      150gr. of semolina
      300 gr. of ricotta cheese
      50 gr. of unsalted butter
      175 gr. of granulated sugar (+-)
      6 eggs
      2 lemons
      cinnamon stick
      2 shots citrus liqueur (I used limoncello)

      Add milk, sugar, peel of 1 lemon and the cinnamon stick to a large pot, heat and just before it boils, away from the heat, remove the lemon peel and the cinnamon stick. Gradually and slowly add the semolina, return to the heat , bring to a boil, lower the heat and cook for about 5 minute. Remove from the heat, add the butter and let cool. When this mixture is cold, add 5 egg yolks and 1 whole egg, one at the time and incorporating it into the batter before adding the next one. Add the ricotta cheese, the zest of the remaining lemon and the liqueur. Whip the remaining egg whites to a soft peek and fold in gently. Add the batter to a greased and sprinkled with granulated sugar spring-form pan. Cook at 400 for about 45+minutes until the top is golden brown. Cool and sprinkle with confectioner sugar before serving.

      Personal notes:

      You may have to adjust the sugar content to your liking because the original recipe called for five spoons of sugar!?!? I used regular soup spoons but seemed not quite enough so I increased the sugar to 175 gr.(I realize now that soup spoons are a lot larger in Europe). It also called for 1/2 glass of citrus liqueur, how big is the glass? I used about 2 shots of limoncello but it may be interesting to see what Grand Marnier does to it. Lastly it took me about one hour and a half to cook the cake to where I wanted it to be.

      The bottom line, if you like this cake, experiment with it until you achieve your goal.

      A scrap book for notes
      An apron
      Dress casual and comfortable

      Remember we will be having lunch (the dishes we have prepared) after the class. Most of trhe attendees will bring wine to drink with lunch but Iced tea and water will be available.

      Matt,

      Forgive me for the delay to reply to your question. Try the following:

      – use 10 to 1 potato flour ratio
      – use a potato ricer as the one we used in the class
      – use only Idaho Russett potatoes
      – do not overwork the dough

      You can always take another cooking class where we’ll prepare gnocchi. The next round of Cooking Classes will begin in October.

    restaurant three times and each time was better than the last.
    We live in east falls within walking distance and would to attend some of your cooking classes. While it looks like they fill up pretty quick, we would appreciate if you could add us to any waiting list you may have. We will be down for dinner in a week or so. One last thing, is there any chance you could supply your recipe for the sun dried tomato bruschetta you serve at the beginning of every meal with the bread?     Franco, I tried to replicate the sun dried tomato pesto/bruschetta that you serve at the beginning of every meal. My 1st problem is that I am not sure exactly what it really is, pesto or bruschetta? I used sun dried tomato, fresh chopped garlic, fresh basil, fresh parsley, salt and pepper. I feel like I got the taste, kind of, but I definitely can not get anywhere near the texture and consistency that you serve.
    Can you offer me any advice? Did I use the correct ingredients? Is there any chance you could share that recipe with me? Yours has a consistency and flavor “punch” that I can’t seem to figure out. That simple starter at your restaurant is the best thing I have ever eaten, hands down. Thanks in advance for any help you can give. I will certainly be signing up for the cooking classes in October.
